Is canning a good idea for fruits and vegetables? Clarence, Slidell, LA

Mort's Answer:
Before the advent of freezers, many of our grandparents canned extensively. Canning allows storage at almost any temperature. The process requires sterilization of equipment and glass sealed jars. Blast freezing of individual peas, blueberries and the like is quite easy in comparison. I prefer to boil or stir fry and slow freeze my tomato and pepper dishes for use through the winter. Pickling is another option. If you have the time and patience for canning, you may find the endeavor just as rewarding.
